Early in the match, the Ukrainian couldn't get anything going in her game and that resulted in easily losing the first set.
But the rest of the match was a completely different story as the world No. 27 found her rhythm and constantly kept the Italian on the back foot.
In the end, Svitolina finished with seven aces and 34 winners and also realized 5-of-11 of her break point chances.
On the other side, Paolini - who had six winners and eight unforced errors after the first set - finished the match with 20 winners and 30 unforced errors and she also failed to registerany breaks in the last two sets.
For a place in the Australian Open round-of-16, the Ukrainian tennis star will play Veronika Kudermetova, who defeated No. 15 seed Beatriz Haddad Maia on Saturday.

Heading into the match, the Russian has a 2-0 head-to-head record against the Ukrainian but they haven't played since 2021.
How the No. 28 seedovercame Paolini?
The match actually started with the world No. 27 claiming the first break in the third game.
But the Ukrainian's lead was short-lived as Paolini responded with three breaks in a row and won the next five games to seal the opener.
Just as in the first set, the No. 28 seed earned a break in the third game.
However, this time, Svitolina was able to hold on to her serve for the rest and force a decider.
After bagging the second set, the former world No. 5 had no issue completing her comeback win as she bageled Paolini in the third set to book a round-of-16 ticket in style.
